Kojic acid
Kojic acid, also known as kojic acid, kojic acid, is an organic acid with antibacterial effect produced by aerobic fermentation of glucose by Aspergillus candidus at 30-32 °C. The molecular structure is a substituted γ-pyrone. Among the γ-pyrone compounds existing in nature, the only famous compounds are kojic acid and maltol. In 1907, Saito isolated kojic acid crystals from koji. In 1912, it was named by Yabuta and its structure was determined in 1924. In 1953, Arnstela (surface fermentation) and in 1971, Kitada Makio (submerged fermentation) used isotope tracing technology to prove that kojic acid is formed by direct oxidation and dehydration of glucose without carbon skeleton fracture.
Usage:
Cosmetics field: Kojic acid can effectively inhibit the activity of tyrosinase and prevent melanin production. It is often used in whitening and freckle removal products to help the skin reduce pigmentation, brighten skin tone, and is relatively low in irritation, suitable for a variety of skin types.
Food industry: It has antioxidant properties and can be used as a food preservative to prevent oxidative rancidity of oils and fats, prolong the shelf life of food; it can also inhibit enzymatic browning in food processing and maintain the color of fruits, vegetables and other products.
Medicine: Kojic acid's antibacterial and anti-inflammatory abilities have been applied in the development of some external drugs and health products, helping to treat skin inflammation, acne, etc., and also showing potential value in tumor research.
