DL-malic acid is used in food industry as sour agent, color retention agent, preservative and emulsifying stabilizer of egg yolk, etc. It is also used in pharmaceutical industry.Dl-malic acid is used as a souring agent in cooling beverages (such as lactic acid bacteria drinks, milk drinks, soft drinks, cola), frozen foods (such as fruit syrup, ice cream, etc.), plus Chemicalbook products (such as fruit wine, mayonnaise, etc.), color retention agent in fruit drinks, preservatives, and emulsifying stabilizer for egg yolks, etc.
